Ingredients

  • 1 1/2 lbs. boneless, skinless chicken breasts
  • 1 tsp. Italian seasoning
  • 1 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 Tbsp. olive oil
  • 3 Tbsp. butter, divided
  • 4 cloves garlic, minced
  • 3 c. chicken broth
  • 12 oz. penne pasta, uncooked
  • 1 c. heavy cream
  • 1 1/4 c. freshly grated Parmesan cheese
  • 1/2 tsp. Italian seasoning
  • Salt & black pepper, to taste
  • Chopped fresh parsley, optional
  • Extra Parmesan, for serving

Instructions

  1. Slice the chicken breasts into thick strips or cutlets. Season with 1 tsp. Italian seasoning, garlic powder, paprika, salt and pepper.
  2. Heat olive oil and 1 Tbsp. butter in a large skillet over medium-high heat. Add chicken and cook for about 4–5 minutes per side, or until golden brown and cooked through. Transfer to a plate and set aside.
  3. Reduce heat to medium. Add remaining 2 Tbsp. butter and garlic to the same skillet. Cook for about 30 seconds, just until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Stir in the uncooked penne.
  5. Bring to a gentle boil, then reduce heat, cover and simmer for 10–12 minutes, stirring occasionally, until the pasta is tender. Add a splash more broth if needed as it cooks.
  6. Reduce heat to low. Stir in heavy cream, Parmesan and remaining 1/2 tsp. Italian seasoning. Continue stirring until the cheese melts and the sauce becomes smooth and creamy.
  7. Taste and season with additional salt and black pepper if needed.
  8. Return the chicken to the skillet and spoon some of the creamy Parmesan sauce over the top. Let everything warm together for 2–3 minutes.
  9. Finish with fresh parsley and plenty of extra Parmesan. Serve hot.
