Cajun Sausage & Tortellini Bake

This Cajun Sausage & Tortellini Bake is one of those easy dinners that comes together with hardly any prep. Refrigerated cheese tortellini, smoky Cajun sausage and sun-dried tomatoes bake in a creamy Cajun Alfredo sauce, then everything gets topped with Parmesan and mozzarella until hot and cheesy.

It’s an easy weeknight casserole when you want something a little different without spending all evening in the kitchen. Serve it with garlic bread, a simple salad or roasted vegetables and dinner is done.

Ingredients

  • 1 lb Cajun sausage, sliced
  • 20 oz refrigerated cheese tortellini
  • 1 jar (about 15 oz) Cajun Alfredo sauce
  • 1 cup chopped sun-dried tomatoes, drained if packed in oil
  • 3/4 cup chicken broth, plus more as needed
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon lemon pepper
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, or to taste
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F. Lightly grease a 9×13-inch baking dish.
  2. Add the tortellini, sliced Cajun sausage and chopped sun-dried tomatoes to the baking dish.
  3. Add the Cajun Alfredo sauce, chicken broth, garlic powder, onion powder, lemon pepper, black pepper and red pepper flakes. Stir everything together until the tortellini is evenly coated. Add a splash more chicken broth if needed so there is plenty of sauce around the tortellini.
  4. Cover tightly with foil and bake for 20 minutes.
  5. Remove from the oven and stir. Sprinkle the Parmesan and mozzarella evenly over the top.
  6. Return to the oven uncovered and bake for another 8–10 minutes, or until the tortellini is tender, the sauce is bubbling and the cheese is melted and lightly browned.
  7. Let stand for about 5 minutes before serving. The sauce will thicken slightly as it rests.

Texas Girl Tip

Different brands of refrigerated tortellini absorb different amounts of liquid. If the pasta looks dry when you remove the foil, stir in another splash of chicken broth before adding the cheese.
