Hot Honey Cornbread Casserole is an easy weeknight dinner with just the right mix of sweet, spicy and savory. Seasoned ground beef, corn, tomatoes with green chiles and plenty of cheddar are topped with a soft, cheesy hot honey cornbread layer and baked until golden.
Using JIFFY Hot Honey Corn Muffin Mix keeps this casserole incredibly simple while giving the cornbread a little extra kick. Finish it with a drizzle of hot honey right before serving for an easy comfort food dinner that’s especially good for fall.
Ingredients
Beef Filling
- 1 lb ground beef
- 1 small yellow onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chiles, well drained
- 1 cup shredded sharp cheddar cheese
Hot Honey Cornbread Topping
- 1 (8.5 oz) box JIFFY Hot Honey Corn Muffin Mix
- 1 large egg
- 1/4 cup milk
- 1/2 cup sour cream
- 1/2 cup shredded sharp cheddar cheese
For Finishing
- 1–2 tablespoons hot honey
Instructions
- Preheat oven to 375°F. Lightly grease an 8×8-inch or 2-quart baking dish.
- Add ground beef and diced onion to a large skillet over medium heat. Cook until the beef is browned and the onion is tender. Drain excess grease.
- Stir in garlic powder, smoked paprika, chili powder, salt and black pepper.
- Add the drained corn and tomatoes with green chiles. Cook for about 2 minutes, then remove from heat.
- Spread the beef mixture evenly in the prepared baking dish. Sprinkle 1 cup shredded cheddar over the top.
- In a medium bowl, stir together the JIFFY Hot Honey Corn Muffin Mix, egg, milk, sour cream and remaining 1/2 cup cheddar just until combined.
- Spoon the cornbread batter over the beef mixture and gently spread it toward the edges.
- Bake for 30–35 minutes, or until the cornbread is golden brown and cooked through in the center.
- Let the casserole rest for 5–10 minutes.
- Drizzle lightly with hot honey just before serving.

Quick Note
Drain the tomatoes with green chiles really well. Extra liquid in the beef mixture can make it harder for the cornbread topping to cook through in the center.
