This Cookie Butter Iced Latte is sweet, creamy and packed with those warm caramelized cookie and cinnamon flavors that make cookie butter so good. Espresso keeps it from becoming overly sweet, while a little vanilla and brown sugar bring out that cozy spiced flavor.
The cookie butter cold foam is my favorite part. It’s rich enough to feel like a coffee shop treat but still easy enough to make at home in just a few minutes.
Ingredients
For the Cookie Butter Iced Latte
- 3 shots blonde espresso
- 1 tablespoon Biscoff cookie butter
- 2 teaspoons brown sugar
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon ground cinnamon
- 1/2 cup milk of choice
- Ice
For the Cookie Butter Cold Foam
- 3 tablespoons heavy cream
- 2 tablespoons milk
- 2 teaspoons Biscoff cookie butter
- 1 teaspoon vanilla syrup
- Pinch of cinnamon
Instructions
- Add the hot espresso, 1 tablespoon cookie butter, brown sugar, vanilla and cinnamon to a glass. Stir well until the cookie butter and brown sugar have completely dissolved.
- Fill a 16-ounce glass with ice. Pour in the espresso mixture, then add the milk.
- Add the heavy cream, milk, 2 teaspoons cookie butter, vanilla syrup and cinnamon to a milk frother. Froth until thick and creamy but still pourable.
- Pour the cookie butter cold foam over the iced latte. Sprinkle with a little cinnamon or crushed Biscoff cookie, if desired. Serve immediately.
Quick Note
Mix the cookie butter into hot espresso. It melts much more easily while the espresso is hot and gives the latte a smooth texture instead of little clumps of cookie butter.
