Nana’s Hummingbird Cake

A moist & flavorful Southern classic that’s simply unforgettable.

Ingredients

Cake

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1 (8 oz) can crushed pineapple, drained
  • 1 cup chopped pecans

Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs, oil, and vanilla until well combined.
  4. Stir in the mashed bananas and crushed pineapple.
  5. Add the wet ingredients to the dry ingredients and mix just until combined.
  6. Fold in the chopped pecans.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. For the frosting, beat the cream cheese and butter until smooth and creamy.
  11. Add the powdered sugar and vanilla, then beat until light and fluffy.
  12. Frost between the cake layers and over the top and sides. Sprinkle with chopped pecans, if desired.
