Ingredients
Cake
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 3 large eggs
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 1 (8 oz) can crushed pineapple, drained
- 1 cup chopped pecans
Cream Cheese Frosting
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs, oil, and vanilla until well combined.
- Stir in the mashed bananas and crushed pineapple.
- Add the wet ingredients to the dry ingredients and mix just until combined.
- Fold in the chopped pecans.
- Divide the batter evenly between the prepared pans.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, beat the cream cheese and butter until smooth and creamy.
- Add the powdered sugar and vanilla, then beat until light and fluffy.
- Frost between the cake layers and over the top and sides. Sprinkle with chopped pecans, if desired.
