Ingredients
For the Chicken
- 1 lb boneless, skinless chicken breast, diced
- 1 teaspoon garlic powder
- 1 teaspoon ranch seasoning
- ½ teaspoon paprika
- Salt and black pepper, to taste
For the Pasta Bowl
- 8 oz high-protein rotini or penne pasta
- 2 cups fresh spinach
For the Creamy Ranch Sauce
- 1 cup low-fat cottage cheese
- ½ cup plain nonfat Greek yogurt
- ¼ cup chicken broth
- 1 packet (1 oz) ranch seasoning mix
- ¼ cup grated Parmesan cheese
- 1 clove garlic
- Salt and black pepper, to taste
For Topping
- 4 slices turkey bacon, cooked and crumbled
- ¼ cup shredded cheddar cheese
- 2 green onions, sliced
- Fresh parsley, optional
Instructions
- Cook the pasta according to the package directions. Drain and set aside.
- Season the chicken with garlic powder, ranch seasoning, paprika, salt, and black pepper.
- Cook the chicken in a large skillet over medium heat until golden brown and fully cooked.
- Add the cottage cheese, Greek yogurt, chicken broth, ranch seasoning, Parmesan cheese, garlic, salt, and black pepper to a blender. Blend until smooth and creamy.
- Add the spinach to the skillet with the cooked chicken. Cook until wilted.
- Pour the ranch sauce into the skillet and stir to combine.
- Add the cooked pasta and toss until everything is evenly coated in the creamy ranch sauce.
- Top with crumbled turkey bacon, shredded cheddar cheese, green onions, and fresh parsley.
- Serve warm and enjoy!
