BBQ Chicken Flatbread + Salad

Ingredients

BBQ Chicken Flatbread

  • 2 naan breads or flatbreads
  • ½ cup BBQ sauce
  • 2 cups shredded rotisserie chicken
  • 1½ cups shredded mozzarella cheese
  • ¼ small red onion, thinly sliced
  • 2 tablespoons chopped fresh cilantro (optional)

Simple Side Salad

  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ¼ cup shredded carrots
  • 2 tablespoons balsamic vinaigrette
  • Salt and black pepper, to taste

Optional Add-Ins

  • Crumbled bacon
  • Pineapple chunks
  • Pickled jalapeños
  • Feta or goat cheese
  • Avocado slices
  • Extra BBQ sauce for drizzling

Instructions

Make the Flatbread

  1. Preheat oven to 425°F.
  2. Place the flatbreads on a large baking sheet.
  3. Spread BBQ sauce evenly over each flatbread.
  4. Top with the shredded chicken, mozzarella cheese, and sliced red onion.
  5. Bake for 10–12 minutes, or until the cheese is melted and bubbly and the edges are lightly golden.
  6. Sprinkle with fresh cilantro, if using, then slice.

Make the Salad

  1. Add the mixed greens, cherry tomatoes, cucumber, and shredded carrots to a large bowl.
  2. Drizzle with the balsamic vinaigrette and toss gently to coat.
  3. Season with a pinch of salt and black pepper.
