Loaded Southwest Boat Dip

A creamy, zesty dip loaded with bold Tex-Mex flavors that’s perfect for lake days, cookouts, game nights, or anytime you need an easy crowd-pleaser.

Ingredients

  • 16 oz light sour cream
  • 8 oz whipped cream cheese, softened
  • 1 packet ranch seasoning mix
  • 1 teaspoon taco seasoning
  • 1 (10 oz) can Rotel Original, well drained
  • 1 cup freshly shredded sharp cheddar cheese
  • ½ cup pepper jack cheese, shredded
  • ½ cup cooked corn (fresh, canned, or thawed frozen)
  • ¼ cup diced green onions
  • ¼ cup chopped fresh cilantro (optional)
  • Juice of ½ lime
  • ½ teaspoon smoked paprika
  • Fresh cracked black pepper, to taste

Optional Mix-Ins

  • Diced jalapeños
  • Crumbled bacon
  • Diced avocado (add just before serving)
  • Black beans, rinsed and drained
  • Finely diced mini sweet peppers

Instructions

In a large bowl, beat together the softened cream cheese and sour cream until smooth and fluffy.

Mix in the ranch seasoning, taco seasoning, smoked paprika, lime juice, and black pepper.

Fold in the drained Rotel, cheddar cheese, pepper jack cheese, corn, green onions, and cilantro.

Cover and refrigerate for at least 30 minutes to allow the flavors to blend.

Before serving, garnish with extra cheese, green onions, cilantro, and a sprinkle of smoked paprika.

Serve chilled with tortilla chips, Fritos Scoops, pita chips, pretzels, or fresh vegetables.
