Nana’s Old-Fashioned Blackberry Cobbler

Ingredients

Blackberry Filling

  • 6 cups fresh or frozen blackberries
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon (optional, but very Southern)
  • Pinch of salt

Cobbler Topping

  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cut into cubes
  • ¾ cup whole milk
  • 1 teaspoon vanilla extract

For the Top

  • 1 tablespoon melted butter
  • 2 tablespoons granulated sugar

Instructions

Preheat oven to 375°F. Lightly butter a 9×13-inch baking dish.

In a large bowl, gently stir together the blackberries, sugars, cornstarch, lemon juice, vanilla, cinnamon, and salt. Pour the berry mixture into the prepared baking dish and spread it into an even layer.

In another bowl, whisk together the flour, sugar, baking powder, and salt. Cut the cold butter into the flour mixture with a pastry cutter or fork until it resembles coarse crumbs. Stir in the milk and vanilla just until a soft dough forms. Don’t overmix.

Using a large spoon or cookie scoop, dollop spoonfuls of dough all over the blackberry filling, leaving small spaces between each mound so the bubbling fruit can show through while baking.

Brush the tops lightly with melted butter, then sprinkle evenly with the granulated sugar.

Bake for 40 to 45 minutes, or until the blackberry filling is thick and bubbling around the edges and the topping is beautifully golden brown.

Allow the cobbler to rest for about 15 minutes before serving so the juices have time to thicken slightly.

Serve warm with vanilla ice cream or a splash of cold heavy cream.
