Ingredients

  • 20 oz (1¼ lbs) 99% lean ground turkey
  • 4 cups chopped romaine lettuce
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup pico de gallo
  • ½ cup light Mexican cheese
  • ½ cup salsa
  • ½ cup light avocado crema (recipe below)
  • Taco seasoning, salt, and pepper to taste

Light Avocado Crema

  • 1 cup nonfat Greek yogurt
  • 1 ripe avocado
  • 2 tsp lime juice
  • 1 tsp garlic powder
  • ¼ tsp salt (or to taste)

Blend until smooth and creamy. Refrigerate until ready to use.

Instructions

  1. Cook the ground turkey in a skillet over medium heat. Add taco seasoning, salt, and pepper. Cook until browned and fully cooked, about 6–8 minutes.
  2. Divide chopped romaine lettuce among 4 bowls as the base.
  3. Evenly top with seasoned turkey, black beans, corn, pico de gallo, and salsa.
  4. Sprinkle with light Mexican cheese.
  5. Drizzle each bowl with avocado crema.
  6. Serve immediately and enjoy!
