There’s something deeply unfair about going low carb and having pizza be one of the first things you’re supposed to give up. Thankfully, we’re not doing that around here.
This easy Keto Pizza Dough gives you that pizza-night feeling without all the carbs. The crust has golden, crispy edges with a softer, chewy center, and most importantly, you can actually pick up a slice with your hands! Top it with your favorite low-carb pizza toppings and you’ve got an easy dinner that doesn’t feel like “diet food” at all.

Ingredients
- 1 1/2 c. shredded low-moisture mozzarella cheese
- 2 oz. cream cheese, cubed
- 1 large egg
- 1 1/4 c. finely ground almond flour
- 2 tbsp. grated Parmesan cheese
- 1 tsp. baking powder
- 1/2 tsp. garlic powder
- 1/2 tsp. Italian seasoning
- 1/4 tsp. salt
Instructions
- Preheat oven to 425°F. Line a pizza pan or baking sheet with parchment paper.
- Add mozzarella and cream cheese to a microwave-safe bowl. Microwave for about 60 seconds, stir well, then microwave another 20–30 seconds until completely melted and smooth.
- In a separate bowl, combine almond flour, Parmesan, baking powder, garlic powder, Italian seasoning and salt.
- Stir the egg into the melted cheese mixture. Add the dry ingredients and mix until a dough begins to form.
- Once cool enough to handle, knead the dough with your hands for 1–2 minutes, until everything is evenly incorporated. If the dough becomes too firm while working with it, microwave it for about 10 seconds to soften.
- Place the dough between two sheets of parchment paper and roll into approximately a 12-inch circle, about 1/4-inch thick. Remove the top sheet of parchment.
- Use a fork to poke several holes across the center of the crust. Bake for 8–10 minutes, or until lightly golden.
- Remove from the oven and add a thin layer of low-sugar pizza sauce, mozzarella and your favorite keto-friendly toppings.
- Return to the oven for another 6–8 minutes, until the cheese is melted and bubbly and the edges of the crust are golden brown.
- Let the pizza rest for 5 minutes before slicing. This gives the crust time to firm up and makes the slices easier to pick up.
For an Extra-Crispy Crust
After the first bake, carefully flip the crust and bake the other side for another 2–3 minutes before adding your sauce and toppings. This little extra step makes a big difference if you like a crispier pizza crust.
