Salsa Verde Beef Bowls

Ingredients

Beef

  • 1½ pounds lean ground beef
  • 1 tablespoon olive oil (if needed)
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Sauce

  • 1¼ cups salsa verde
  • 2 tablespoons cream cheese, softened
  • Juice of ½ lime

Bowls

  • 4 cups cauliflower rice, cooked
  • 2 cups shredded romaine lettuce
  • 1 cup Monterey Jack cheese, shredded
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup crumbled cotija cheese
  • ¼ cup chopped cilantro

Optional Toppings

  • Sliced jalapeños
  • Sour cream
  • Extra salsa verde
  • Lime wedges
  • Hot sauce

Instructions

  1. Heat a large skillet over medium-high heat. Add the onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for another 30 seconds.
  2. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain any excess grease if needed.
  3. Stir in the cumin, chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the salsa verde and stir to coat the beef. Mix in the cream cheese and simmer for 3–4 minutes until the sauce becomes creamy. Finish with the fresh lime juice.
  5. Meanwhile, prepare the cauliflower rice according to the package directions or sauté fresh cauliflower rice in a skillet for 4–5 minutes.
  6. Divide the cauliflower rice among four bowls. Add the shredded lettuce, tomatoes, avocado, Monterey Jack cheese, and spoon the salsa verde beef over the top.
  7. Sprinkle with cotija cheese and fresh cilantro. Add any optional toppings and serve immediately.
