These Easy Monster Cookie Sandwiches are such a fun Halloween treat and couldn’t be simpler to make! Soft chocolate chip cookies are sandwiched with colorful frosting and finished with candy eyeballs for the cutest little monsters.

Halloween treats don’t have to take all afternoon to be cute. These monster cookies use just a handful of ingredients and every one can look a little different.
Make some with two eyes, give a few three mismatched eyes and don’t worry about making the frosting perfect. The messier and goofier they look, the better!
Easy Monster Cookie Sandwiches

Ingredients
- 1 package refrigerated chocolate chip cookie dough
- 1 container vanilla frosting
- Green gel food coloring
- Orange gel food coloring
- Purple gel food coloring
- Candy eyeballs, assorted sizes
- Halloween sprinkles, optional
Instructions
- Bake the chocolate chip cookies according to the package directions. For softer cookie sandwiches, avoid overbaking. Let the cookies cool completely before assembling.
- Divide the vanilla frosting evenly between three small bowls.
- Tint one bowl green, one orange and one purple using gel food coloring.
- Turn half of the cooled cookies upside down. Spread or pipe a generous amount of colored frosting over the flat side of each cookie.
- Top each with another cookie and gently press until some of the frosting begins to peek out around the edges.
- Press candy eyeballs into the exposed frosting. Use two eyes on most of the cookies and add three mismatched eyes to a few for a fun monster look.
- Add Halloween sprinkles if desired.
- Serve right away or store covered until ready to serve.
Tips for the Cutest Monster Cookies
Don’t try to make these perfect! Slightly uneven cookies, messy frosting and crooked candy eyes are exactly what make them cute.
Make sure the cookies are completely cool before adding the frosting or it can melt and slide out of the sandwiches. Gel food coloring also works better than liquid food coloring because you can get bright Halloween colors without thinning the frosting.
