Snickerdoodle Truffles

These Snickerdoodle Truffles are soft, creamy little bites filled with warm cinnamon-sugar flavor and coated in white chocolate. They’re an easy no-bake Christmas treat that looks pretty on a holiday dessert tray and can be made ahead of time.

The cream cheese gives the centers a rich, almost cookie-dough-like texture while cinnamon and vanilla give them that classic snickerdoodle flavor. A little cinnamon sugar on top makes them extra pretty without making them fussy.

Ingredients

Truffles

  • 2 cups finely crushed vanilla wafer cookies
  • 4 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Coating

  • 12 oz white chocolate melting wafers
  • 1 teaspoon coconut oil or vegetable shortening, optional, for thinning

Cinnamon Sugar Topping

  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Add the crushed vanilla wafers, cream cheese, powdered sugar, cinnamon, vanilla and salt to a large bowl.
  2. Mix until everything is completely combined and a soft dough forms.
  3. Scoop about 1 tablespoon of the mixture at a time and roll into balls.
  4. Place the truffles on a parchment-lined baking sheet and refrigerate for 30 minutes, or until firm.
  5. Melt the white chocolate according to package directions. If needed, stir in a small amount of coconut oil or shortening to make the coating smoother.
  6. Combine the granulated sugar and cinnamon in a small bowl.
  7. Dip each chilled truffle into the melted white chocolate, allowing the excess coating to drip off.
  8. Return to the parchment-lined baking sheet and immediately sprinkle lightly with cinnamon sugar.
  9. Refrigerate for another 20–30 minutes, or until the coating is completely set.
  10. Keep refrigerated until ready to serve.

Good to Know

Crush the vanilla wafers very finely so the centers stay smooth and creamy. A food processor works perfectly, but you can also place them in a zip-top bag and crush them with a rolling pin.

For a pretty Christmas finish, drizzle a little extra white chocolate over the set truffles and add just a tiny pinch of cinnamon sugar on top.
