Hot Cocoa Brownies

These Hot Cocoa Brownies are rich, fudgy and topped with a gooey layer of mini marshmallows and chocolate. They have all the cozy flavor of a mug of hot chocolate baked into an easy Christmas dessert.

The brownies stay wonderfully dense and chocolatey while the marshmallows get soft and lightly toasted on top. Add a drizzle of melted chocolate and a few chocolate chips for a festive dessert that’s perfect for Christmas movie nights, parties or holiday dessert trays.

Ingredients

Brownies

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Hot Cocoa Topping

  • 2 cups mini marshmallows
  • 1/3 cup semi-sweet chocolate chips
  • 2 tablespoons chocolate chips, melted, for drizzling

Instructions

  1. Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving a little overhang for easy removal.
  2. Whisk the melted butter and sugar together until well combined.
  3. Add the eggs and vanilla and whisk until smooth and glossy.
  4. Add the flour, cocoa powder and salt. Fold together just until no dry streaks remain.
  5. Fold in 1/2 cup chocolate chips.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 23–27 minutes, until the edges are set and a toothpick inserted near the center comes out with moist crumbs.
  8. Remove from the oven and immediately sprinkle the mini marshmallows and 1/3 cup chocolate chips evenly over the top.
  9. Return to the oven for 3–5 minutes, just until the marshmallows are soft and puffed. For lightly toasted tops, broil for 30–60 seconds, watching them constantly.
  10. Cool completely before drizzling with the melted chocolate.
  11. Let the chocolate set, then lift the brownies from the pan and cut into 16 squares.

Good to Know

For fudgy brownies, don’t wait for a completely clean toothpick. A few moist chocolate crumbs are exactly what you want.

If you broil the marshmallows, stay right by the oven. They can go from perfectly golden to tiny Christmas bonfire remarkably fast. šŸ˜‚
