Sweet potatoes, seasoned ground beef, creamy cottage cheese and avocado come together in one seriously satisfying bowl. A little hot honey adds that sweet-and-spicy finish that works so well with the smoky Southwest seasonings. Plus, you get a nice balance of protein, carbs and healthy fats all in one meal.
I love bowls like this for an easy lunch or weeknight dinner because there’s really not much to them. Roast the potatoes while the beef cooks, pile everything into a bowl and you’re done. You can also prep the beef and sweet potatoes ahead of time, then add the cottage cheese and avocado when you’re ready to eat.

Ingredients
For the Sweet Potatoes
- 1 medium sweet potato, cut into ½-inch cubes
- 2 teaspoons olive oil
- ½ teaspoon smoked paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon chili powder
- Salt and black pepper, to taste
For the Beef
- 8 ounces 90/10 lean ground beef
- ½ teaspoon chili powder
- ½ teaspoon ground cumin
- ¼ teaspoon garlic powder
- ¼ teaspoon smoked paprika
- Salt and black pepper, to taste
For the Bowls
- 1 cup low-fat cottage cheese
- ½ medium avocado, sliced
- 2 teaspoons hot honey or hot sauce
- ½ lime, cut into wedges
- Red pepper flakes, optional
Instructions
- Preheat oven to 425°F.
- Toss the cubed sweet potato with olive oil, smoked paprika, garlic powder, chili powder, salt and pepper. Spread in a single layer on a baking sheet.
- Roast for 20–25 minutes, flipping halfway through, until tender and lightly browned.
- While the sweet potatoes roast, heat a skillet over medium-high heat. Add the ground beef and season with chili powder, cumin, garlic powder, smoked paprika, salt and pepper.
- Cook the beef until browned and completely cooked through, breaking it into small crumbles as it cooks. Drain excess grease if needed.
- Divide the cottage cheese, roasted sweet potatoes, seasoned ground beef and sliced avocado between two bowls.
- Drizzle each bowl with 1 teaspoon hot honey or hot sauce. Finish with a squeeze of fresh lime and red pepper flakes, if desired.
