Soft, gooey and full of cozy fall flavor, these Pumpkin Spice Blondies start with chocolate chip cookie mix and a can of pumpkin. A little melted butter, vanilla and pumpkin pie spice make them extra rich without turning a simple recipe into a project.
Ingredients
- 1 (15 oz) can pumpkin puree
- 1 (17.5 oz) bag chocolate chip cookie mix
- ¼ cup butter, melted
- 1½ teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ½ cup chocolate chips, optional
Instructions
- Preheat oven to 350°F. Lightly grease an 8×8-inch baking dish or line with parchment paper.
- In a large bowl, combine the pumpkin puree, melted butter and vanilla.
- Stir in the chocolate chip cookie mix, pumpkin pie spice and salt until just combined. The batter will be thick.
- Fold in the additional chocolate chips, if using.
- Spread the batter evenly into the prepared baking dish and smooth the top.
- Bake for 30–40 minutes, or until the edges are set and the center is baked through. A toothpick inserted into the center should come out with a few moist crumbs.
- Allow the blondies to cool completely before slicing. They will firm up as they cool.
