Spanish Rice

2-3 cloves minced garlic

1/2 small chopped onion

2 tbsp Olive oil

2 c minute rice

1 can rotel

2 c chicken broth

1/2 small can tomato sauce

Chili powder to taste

Cumin to taste

Garlic salt and/or seasoned salt to taste

Heat oil in sauce pan at medium heat and add onion and garlic. Stir 2-3 minutes. Add rice and brown for about 5 minutes. Add rotel, chicken broth and seasonings. Bring to a boil. Cover and turn to low. Simmer for 6 minutes. Add tomato sauce and more seasonings if needed. Cover again and continue cooking for 5-6 more minutes until rice is cooked.
