Lemon Blondies

These homemade Lemon Blondies are soft, buttery, and perfectly chewy with a delicious burst of fresh lemon flavor. With lightly golden edges, a rich, tender center, and a simple dusting of powdered sugar, they’re an irresistible treat for lemon lovers!

Unlike traditional lemon bars, these blondies don’t have a custard filling or a crumbly crust. Instead, they have a dense, buttery texture similar to a classic blondie, with just the right balance of sweetness and citrus.

They’re easy to make with simple pantry ingredients and fresh lemons. Perfect for spring gatherings, summer cookouts, afternoon treats, or whenever you’re craving something sweet and lemony!

Prep Time: 15 minutes
Cook Time: 23–28 minutes
Total Time: 38–43 minutes, plus cooling
Servings: 16 blondies

Ingredients

  • ½ cup unsalted butter, melted and slightly cooled
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 2 large eggs
  • 2 tablespoons fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving a little overhang for easy removal.
  2. In a large mixing bowl, combine the granulated sugar and lemon zest. Rub together with your fingertips until fragrant.
  3. Add the melted butter and brown sugar. Whisk until smooth and well combined.
  4. Add the eggs, lemon juice, and vanilla extract. Whisk until the mixture is smooth and glossy.
  5. Add the flour, baking powder, and salt. Gently stir until just combined, being careful not to overmix.
  6. Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.
  7. Bake for 23–28 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow the blondies to cool completely in the pan before lifting them out using the parchment paper.
  9. Dust the tops generously with powdered sugar and cut into 16 squares.

Tips for the Best Lemon Blondies

Use fresh lemons. Fresh lemon zest gives these blondies their bright citrus flavor. Bottled lemon juice won’t provide quite the same fresh taste.

Don’t overmix the batter. Stir the dry ingredients just until incorporated to keep the blondies soft and tender.

Avoid overbaking. For that perfectly chewy blondie texture, remove them from the oven when the center is just set and a toothpick comes out with a few moist crumbs.

Let them cool completely. Cooling allows the blondies to firm up, making them easier to cut into neat squares.

Dust just before serving. Powdered sugar can gradually absorb moisture, so add it shortly before serving for the prettiest presentation.

How to Store Lemon Blondies

Store lemon blondies in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.

For longer storage, freeze the blondies without powdered sugar in a freezer-safe container for up to 2 months. Thaw at room temperature and dust with powdered sugar before serving.
