These Loaded Potato Taco Bowls are an easy dinner packed with crispy seasoned potatoes, taco-seasoned ground beef and plenty of fresh toppings. Everything gets finished with a creamy smoky chipotle crema that pulls the whole bowl together.
They have everything I love about loaded potatoes and taco night in one bowl. The crispy potatoes make a hearty base while cheddar, charred corn, pico de gallo, avocado and jalapeño add plenty of color, texture and flavor.

These bowls are easy to customize and surprisingly simple to put together. While the potatoes roast, you can cook the taco meat, mix the crema and prep the toppings.
The smoky chipotle crema might be my favorite part. Instead of a tart lime-heavy sauce, this one combines sour cream and mayonnaise with smoky adobo sauce and chili powder. Just a small amount of lime brightens it up without overpowering the smoky flavor.
Ingredient Notes
Baby gold potatoes: These roast beautifully and get crispy around the edges while staying creamy inside. Cut them into similar-size pieces so they cook evenly.
Ground beef: Lean ground beef works especially well for these bowls because you get plenty of taco flavor without too much grease.
Charred corn: Browning the corn adds another layer of flavor and makes it much better than simply adding warmed corn.
Pico de gallo: Adds tomatoes, onion and freshness without requiring several separate toppings.
Avocado: Add it right before serving so it stays fresh.
Adobo sauce: You’ll find this in cans of chipotle peppers in adobo. We’re using the sauce rather than a whole pepper for plenty of smoky flavor without making the crema overly spicy.
Tips for the Best Crispy Potatoes
Give the potatoes plenty of room on the baking sheet. If they’re crowded together, they’ll steam instead of developing those crispy browned edges.
Make sure the cut sides of as many potatoes as possible are touching the pan and flip them about halfway through cooking.
For even easier cleanup, line the sheet pan with foil or parchment paper before roasting.
Make It Your Own
One of the best things about taco bowls is how easy they are to customize. You can add extra jalapeño for more heat, leave off toppings you don’t love or add shredded lettuce for a little crunch.
You can also set out all of the toppings separately and let everyone build their own bowl, which makes this an easy family dinner.
Make Ahead & Storage
The potatoes and taco beef can both be prepared ahead of time and stored separately in the refrigerator. The smoky chipotle crema can also be made ahead and refrigerated in an airtight container.
For the best texture, reheat the potatoes in the oven or air fryer until hot and crispy again. Assemble the bowls with the fresh toppings just before serving.

Ingredients
For the Crispy Potatoes
- 1½ pounds baby gold potatoes, cut into bite-size pieces
- 1½ tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Taco Beef
- 1 pound lean ground beef
- 2 tablespoons taco seasoning
- ⅓ cup water
For the Bowls
- 1 cup shredded cheddar cheese
- 1 cup corn, charred or warmed
- 1 cup pico de gallo
- 1 avocado, diced
- 1 jalapeño, thinly sliced
- 2 green onions, sliced
- ¼ cup chopped fresh cilantro
- Lime wedges, for serving
For the Smoky Chipotle Crema
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 tablespoon adobo sauce from canned chipotle peppers
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ teaspoon fresh lime juice
- Pinch of salt
- Water, 1 teaspoon at a time as needed for drizzling
Instructions
- Preheat oven to 425°F.
- Add the potatoes to a large bowl. Toss with olive oil, smoked paprika, garlic powder, onion powder, salt and black pepper until evenly coated.
- Spread the potatoes in a single layer on a large baking sheet. Roast for 25–30 minutes, flipping halfway through, until tender inside and browned and crispy around the edges.
- While the potatoes roast, cook the ground beef in a large skillet over medium-high heat, breaking it apart as it cooks. Drain excess grease if needed.
- Add the taco seasoning and ⅓ cup water to the beef. Stir and simmer for 3–4 minutes, until the beef is well coated and most of the liquid has cooked away.
- If using charred corn, add the corn to a hot skillet and cook for a few minutes until lightly browned in spots.
- To make the smoky chipotle crema, whisk together the sour cream, mayonnaise, adobo sauce, chili powder, garlic powder, onion powder, lime juice and salt. Add water 1 teaspoon at a time as needed until the sauce reaches a drizzling consistency.
- Divide the crispy potatoes among four bowls. Top with taco beef, cheddar cheese, charred corn, pico de gallo, avocado, jalapeño, green onions and cilantro.
- Drizzle with smoky chipotle crema and serve with lime wedges.
