Some nights you just need an easy casserole you can throw together without making a huge mess in the kitchen. Chicken & Stuffing Casserole is one of those good old-fashioned comfort food dinners that doesn’t need to be complicated to be delicious.
Using boxed stuffing keeps this one super simple, while sautéed onion, celery and a little sage and thyme give it that homemade flavor. The creamy chicken filling bubbles up underneath the stuffing while the top gets buttery and golden brown. It’s especially good on a cool fall evening, and using a rotisserie chicken makes it even easier.

Ingredients
3 cups cooked shredded or chopped chicken
1 (6 oz) box chicken-flavored stuffing mix
1½ cups chicken broth, divided
4 tablespoons butter, divided
1 small yellow onion, diced
2 celery stalks, diced
2 cloves garlic, minced
1 (10.5 oz) can cream of chicken soup
½ cup sour cream
½ teaspoon dried thyme
¼ teaspoon rubbed sage
¼ teaspoon black pepper
½ cup shredded cheddar cheese, optional
Instructions
1. Preheat
Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
2. Prepare the stuffing
Place the stuffing mix in a medium bowl. Melt 2 tablespoons butter and pour it over the stuffing along with 1 cup chicken broth.
Toss gently until evenly moistened. Set aside.
3. Cook the vegetables
Melt the remaining 2 tablespoons butter in a skillet over medium heat.
Add the onion and celery and cook for 4–5 minutes, until softened.
Add the garlic and cook for another 30 seconds.
4. Make the chicken filling
In a large bowl, combine the chicken, cream of chicken soup, sour cream, remaining ½ cup chicken broth, cooked onion and celery, thyme, sage and black pepper.
Spread evenly in the prepared baking dish.
If using cheddar cheese, sprinkle it evenly over the chicken mixture.
5. Add the stuffing
Spoon the prepared stuffing evenly over the chicken mixture. Keep the stuffing fairly loose rather than pressing it down so the top can get golden and crispy as it bakes.
6. Bake
Bake uncovered for 30–35 minutes, until the chicken filling is hot and bubbling around the edges and the stuffing is golden brown and crisp on top.
Let rest for 5–10 minutes before serving.

Rotisserie chicken makes this casserole especially quick and easy. You can also assemble it earlier in the day, cover and refrigerate it until dinner. If baking straight from the refrigerator, plan on adding about 5–10 minutes to the baking time.
