Caramel apples are one of those treats that just belong to fall, so turning those same flavors into a fun drink seemed like a no-brainer. This Caramel Apple Mocktail has crisp apple cider, a little caramel, cinnamon and just enough ginger ale to make it bubbly. It tastes like fall in a glass without being overly sweet.
I love this one for Halloween movie nights, fall parties or just a cozy Saturday night at home. It looks festive enough for a party but takes only a few minutes to throw together. Make the cider mixture ahead of time, then add the ginger ale right before serving so everyone gets that fizzy finish.

Ingredients
3 cups chilled apple cider
1 cup chilled ginger ale
1/4 cup caramel sauce, plus more for drizzling
1 tablespoon fresh lemon juice
1/2 teaspoon ground cinnamon
Pinch of sea salt
Ice
Thin apple slices, for garnish
Cinnamon sticks, optional
Caramel sauce and cinnamon sugar, optional for the rims
Instructions
1. Prepare the glasses.
For a caramel apple rim, lightly dip the rims of 4 glasses in caramel sauce, then into cinnamon sugar. Fill the glasses with ice.
2. Make the caramel apple base.
Add the apple cider, 1/4 cup caramel sauce, lemon juice, cinnamon and a small pinch of sea salt to a pitcher. Whisk until the caramel is well incorporated.
3. Add the fizz.
Just before serving, slowly stir in the chilled ginger ale.
4. Serve.
Pour over ice and garnish each glass with a thin apple slice and cinnamon stick. Add a small drizzle of caramel inside the glass for a little extra caramel flavor, if desired.
Make Ahead
Combine the apple cider, caramel sauce, lemon juice, cinnamon and salt up to one day ahead and refrigerate. Wait to add the ginger ale until just before serving so the mocktail stays bubbly.
