Cheesy Sausage Tater Tot Breakfast Casserole

This easy Tater Tot Breakfast Casserole is loaded with savory breakfast sausage, fluffy eggs, melted cheddar and a crispy layer of golden tater tots. It’s hearty, family-friendly and perfect for weekend breakfast, brunch or busy holiday mornings.

Ingredients

  • 1 lb breakfast sausage
  • 8 large eggs
  • 1 cup whole milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 (32 oz) bag frozen tater tots
  • 2 tablespoons sliced green onions, optional
  • Cooking spray

Instructions

  1. Preheat oven to 375°F. Lightly coat a 9×13-inch baking dish with cooking spray.
  2. Cook the breakfast sausage in a large skillet over medium heat, breaking it into crumbles as it cooks. Drain any excess grease.
  3. Spread the cooked sausage evenly across the bottom of the prepared baking dish.
  4. Sprinkle 1½ cups of the cheddar cheese evenly over the sausage.
  5. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt and black pepper.
  6. Pour the egg mixture evenly over the sausage and cheese.
  7. Arrange the frozen tater tots in a single layer over the top. There’s no need to thaw them first.
  8. Bake uncovered for 35 minutes.
  9. Sprinkle the remaining ½ cup cheddar cheese over the tater tots. Return to the oven and bake for another 10–15 minutes, or until the eggs are set and the tater tots are golden and crispy.
  10. Let the casserole rest for 5–10 minutes before slicing. Garnish with sliced green onions, if desired.

Make-Ahead Tip

Prepare the sausage, cheese and egg layers the night before, cover and refrigerate. Add the frozen tater tots just before baking so they stay nice and crispy.

Easy Variations

Add diced bell peppers, jalapeños or crumbled bacon. You can also swap the cheddar for pepper jack for a little extra kick.
