Tender steak, colorful bell peppers, and caramelized onions are roasted together on one pan for an easy weeknight dinner with almost no cleanup. Perfect for busy families, meal prep, or Taco Tuesday!

Ingredients
- 1½ lbs flank steak or sirloin, sliced into thin strips against the grain
- 3 bell peppers (red, yellow, and green), sliced
- 1 large yellow onion, sliced
- 2 tablespoons olive oil
Seasoning
- 2 teaspoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Pinch of cayenne (optional)
For Serving
- Warm flour or corn tortillas
- Fresh lime wedges
- Cilantro (optional)
- Sour cream
- Guacamole or sliced avocado
- Shredded Monterey Jack or cheddar cheese
- Pico de gallo or salsa
Instructions
1. Preheat
Preheat oven to 425°F. Line a large sheet pan with parchment paper or lightly grease it.
2. Season
In a large bowl, combine the sliced steak, peppers, and onion.
Drizzle with olive oil and sprinkle on all of the seasonings. Toss until everything is evenly coated.
3. Arrange
Spread everything into a single layer on the sheet pan. Avoid overcrowding so the vegetables roast instead of steam.
4. Bake
Bake for 15 minutes, then stir everything.
Return to the oven for 3–7 more minutes, or until the steak is just cooked through and the vegetables are tender with lightly browned edges.
For extra caramelization, broil for 1–2 minutes at the end.
5. Serve
Squeeze fresh lime juice over the fajitas before serving.
Pile into warm tortillas and top with your favorite toppings.
