Ingredients
- 1 pound rigatoni
- 1 pound hot Italian sausage, casings removed
- 1 tablespoon olive oil (if needed)
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- ¼–½ teaspoon crushed red pepper flakes (to taste)
- 2 tablespoons tomato paste
- 1 (15-ounce) can tomato sauce
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup freshly grated Parmesan cheese
- Salt and black pepper, to taste
- Fresh parsley or basil, chopped, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the rigatoni until al dente according to package directions. Reserve ½ cup of pasta water, then drain.
- Meanwhile, brown the sausage in a large skillet over medium-high heat, breaking it into crumbles. Drain excess grease if needed.
- Add the onion and cook for 4–5 minutes until softened. Stir in the garlic, Italian seasoning, smoked paprika, and crushed red pepper flakes. Cook for 30 seconds.
- Add the tomato paste and cook for 1 minute, stirring constantly.
- Pour in the tomato sauce, chicken broth, and heavy cream. Stir well and simmer for 5–7 minutes.
- Reduce the heat to low and stir in the Parmesan cheese until melted and smooth.
- Add the cooked rigatoni and toss until well coated. If the sauce is too thick, add a splash of the reserved pasta water.
- Taste and adjust seasoning with salt and pepper.
- Garnish with fresh parsley or basil and extra Parmesan before serving.
