Tuna Salad Stuffed Pitas

Quick, creamy, and packed with fresh flavor, these Tuna Salad Stuffed Pitas make an easy lunch or light dinner that’s ready in just minutes.

Ingredients

  • 2 (5-ounce) cans tuna in water, drained
  • ¼ cup mayonnaise
  • 1 tbsp plain Greek yogurt
  • 1 tsp Dijon mustard
  • ¼ cup finely diced red onion
  • ¼ cup finely diced celery
  • 1 tbsp sweet pickle relish
  • 1 tbsp fresh lemon juice
  • Salt and black pepper, to taste
  • 4 whole wheat or regular pita pockets
  • Lettuce leaves
  • Sliced tomatoes
  • Sprouts or microgreens (optional)

Instructions

  1. In a medium bowl, combine the tuna, mayonnaise, Greek yogurt, Dijon mustard, red onion, celery, pickle relish, lemon juice, salt, and pepper.
  2. Stir until smooth and creamy. Taste and adjust seasoning if needed.
  3. Cut each pita in half to create pockets.
  4. Line each pita with lettuce leaves.
  5. Fill each pita generously with the tuna salad.
  6. Add sliced tomatoes and sprouts or microgreens, if desired.
