Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp kosher salt
- ¼ tsp black pepper
- 8 oz fresh mozzarella, sliced
- 1 cup cherry tomatoes, halved
- ¼ cup fresh basil, chopped (plus extra leaves for garnish)
- ¼ cup balsamic glaze (store-bought or homemade)
Instructions
- Preheat a grill, grill pan, or large skillet over medium-high heat.
- Brush the chicken with olive oil and season both sides with the Italian seasoning, garlic powder, salt, and pepper.
- Cook for 5–6 minutes per side, or until the chicken reaches an internal temperature of 165°F.
- During the last 2 minutes of cooking, top each chicken breast with slices of fresh mozzarella. Cover the grill or skillet briefly so the cheese melts.
- Transfer the chicken to a serving platter and top with the cherry tomatoes and chopped fresh basil.
- Drizzle generously with balsamic glaze just before serving.
