Caprese Chicken with Balsamic Glaze

Fresh, simple, and bursting with Italian-inspired summer flavor, this easy Caprese Chicken is topped with melty mozzarella, juicy tomatoes, fresh basil, and a sweet balsamic glaze.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 8 oz fresh mozzarella, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh basil, chopped (plus extra leaves for garnish)
  • ¼ cup balsamic glaze (store-bought or homemade)

Instructions

  1. Preheat a grill, grill pan, or large skillet over medium-high heat.
  2. Brush the chicken with olive oil and season both sides with the Italian seasoning, garlic powder, salt, and pepper.
  3. Cook for 5–6 minutes per side, or until the chicken reaches an internal temperature of 165°F.
  4. During the last 2 minutes of cooking, top each chicken breast with slices of fresh mozzarella. Cover the grill or skillet briefly so the cheese melts.
  5. Transfer the chicken to a serving platter and top with the cherry tomatoes and chopped fresh basil.
  6. Drizzle generously with balsamic glaze just before serving.
