Loaded Baked Potatoes

Serves: 4 | Ready in: 15 minutes (using microwaved potatoes)

Ingredients

  • 4 large baked potatoes
  • 2 cups shredded rotisserie chicken
  • 1½ cups shredded cheddar
  • Butter
  • Sour cream
  • Bacon bits
  • Green onions

Instructions

  1. Bake or microwave potatoes until tender.
  2. Split open and fluff with butter.
  3. Fill with chicken and cheddar.
  4. Microwave 1–2 minutes to melt the cheese.
  5. Top with sour cream, bacon bits, and green onions.
