Breakfast Power Bowl

Ingredients

Protein

  • 1 lb breakfast sausage (or turkey sausage)
  • 8 large eggs
  • 2 tbsp heavy cream
  • Salt and black pepper, to taste

Veggies

  • 1 tbsp butter
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • ¼ cup diced onion
  • 1 cup baby spinach

Toppings

  • 1 cup shredded sharp cheddar cheese
  • 1 avocado, sliced
  • ¼ cup sliced green onions
  • Fresh salsa
  • Sour cream
  • Everything Bagel seasoning
  • Fresh parsley (optional)

Seasoning Blend

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt

Directions

  1. Brown the breakfast sausage in a large skillet over medium heat until fully cooked. Drain any excess grease if needed and set aside.
  2. In the same skillet, melt the butter. Add the diced bell peppers and onion and cook until tender, about 4–5 minutes.
  3. Stir in the spinach and cook just until wilted. Sprinkle the vegetables with the seasoning blend and stir to combine.
  4. In a bowl, whisk together the eggs, heavy cream, salt, and pepper. Scramble in a separate skillet over medium-low heat until soft and fluffy.
  5. Divide the sautéed vegetables among four serving bowls.
  6. Top each bowl with cooked sausage, scrambled eggs, shredded cheddar, avocado slices, green onions, fresh salsa, and a dollop of sour cream.
  7. Finish with a sprinkle of Everything Bagel seasoning and fresh parsley if desired. Serve immediately.
