Ingredients
Protein
- 1 lb breakfast sausage (or turkey sausage)
- 8 large eggs
- 2 tbsp heavy cream
- Salt and black pepper, to taste
Veggies
- 1 tbsp butter
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- ¼ cup diced onion
- 1 cup baby spinach
Toppings
- 1 cup shredded sharp cheddar cheese
- 1 avocado, sliced
- ¼ cup sliced green onions
- Fresh salsa
- Sour cream
- Everything Bagel seasoning
- Fresh parsley (optional)
Seasoning Blend
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt
Directions
- Brown the breakfast sausage in a large skillet over medium heat until fully cooked. Drain any excess grease if needed and set aside.
- In the same skillet, melt the butter. Add the diced bell peppers and onion and cook until tender, about 4–5 minutes.
- Stir in the spinach and cook just until wilted. Sprinkle the vegetables with the seasoning blend and stir to combine.
- In a bowl, whisk together the eggs, heavy cream, salt, and pepper. Scramble in a separate skillet over medium-low heat until soft and fluffy.
- Divide the sautéed vegetables among four serving bowls.
- Top each bowl with cooked sausage, scrambled eggs, shredded cheddar, avocado slices, green onions, fresh salsa, and a dollop of sour cream.
- Finish with a sprinkle of Everything Bagel seasoning and fresh parsley if desired. Serve immediately.
