Nana’s South of the Border

This is my grandmother’s Tex-Mex casserole recipe. It’s very hearty and full of flavor! Did I mention fast and easy, too? 

Ingredients

  • 1 pound Ground Beef
  • 1 whole Onion, Chopped
  • 1 can (15 Oz. Can) Chili, No Beans
  • 1 can (15 Oz. Can) Hominy
  • 1 can (10.75 Oz. Can) Cream Of Chicken Soup
  • 1 bag (about 9 Oz. Bag) Corn Chips
  • 2 cups Shredded Cheddar Cheese

Preparation

Preheat oven to 375F. Brown meat and onion until well cooked. Add chili, hominy, and soup. Mix together and simmer for a few minutes. Place in a large casserole dish and bake at 375F for 25 minutes. Remove from oven and cover with corn chips and cheese. Place back in the oven for a few minutes until cheese is melted. Serve while hot!
