Cheeseburger Casserole

There are some dinners that just feel like home, and a hot, cheesy casserole straight from the oven is definitely one of them. This one is packed with seasoned ground beef, tender pasta, plenty of cheddar and just enough dill pickle to give it that classic cheeseburger flavor.

It’s the kind of simple, hearty meal that’s perfect for a busy night when you want something everyone will actually eat. Add a few extra pickles and a little ketchup or mustard on top and you’ve got an easy comfort food dinner that feels a little more special than an ordinary weeknight meal.

Serves 6

Ingredients

1 lb ground beef
1 small yellow onion, diced
2 cloves garlic, minced
1 teaspoon Worcestershire sauce
1 teaspoon yellow mustard
2 tablespoons ketchup
1 teaspoon seasoned salt
½ teaspoon black pepper
½ teaspoon smoked paprika
8 oz elbow macaroni
1 can (10.5 oz) condensed cheddar cheese soup
½ cup sour cream
½ cup milk
2 cups shredded sharp cheddar cheese, divided
¼ cup chopped dill pickles, plus more for topping if desired

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
  2. Cook macaroni according to package directions until just al dente. Drain and set aside.
  3. In a large skillet over medium heat, cook ground beef and onion until the beef is browned and the onion is tender. Drain any excess grease.
  4. Add garlic, Worcestershire sauce, mustard, ketchup, seasoned salt, black pepper and smoked paprika. Cook for about 1 minute.
  5. Reduce heat to low. Stir in the cheddar cheese soup, sour cream and milk until smooth.
  6. Add the cooked macaroni, chopped pickles and 1 cup cheddar cheese. Stir until everything is evenly coated.
  7. Transfer to the prepared baking dish and sprinkle the remaining 1 cup cheddar cheese over the top.
  8. Bake uncovered for 20 to 25 minutes, until hot and bubbly and the cheese is melted.
  9. Let rest for about 5 minutes before serving. Top with extra chopped pickles and a drizzle of ketchup or mustard if desired.
