Loaded Broccoli Chicken Bake

If you love a loaded baked potato with plenty of cheese, bacon and sour cream, this easy Loaded Broccoli Chicken Bake gives you all those cozy flavors without the potatoes. Tender chicken and broccoli are tossed in a creamy, cheesy sauce, then topped with even more cheddar and crispy bacon.

This is also one of those recipes that’s perfect for a busy weeknight. Rotisserie chicken makes it incredibly easy, and everything comes together in one casserole dish. It’s hearty enough to serve on its own, but a simple salad on the side makes it a complete low-carb dinner.

Ingredients

  • 3 cups cooked chicken, chopped or shredded
  • 4 cups broccoli florets
  • 6 slices bacon, cooked and crumbled
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ½ cup chicken broth
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • ¼ tsp salt, or to taste
  • 2 cups shredded sharp cheddar cheese, divided
  • 2 green onions, thinly sliced, optional

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
  2. Steam the broccoli for just a few minutes until slightly tender but still firm. Drain very well.
  3. In a large bowl, combine the softened cream cheese, sour cream and chicken broth. Stir until smooth and creamy.
  4. Add the garlic powder, onion powder, smoked paprika, black pepper and salt.
  5. Stir in 1 cup cheddar cheese and half of the crumbled bacon.
  6. Add the cooked chicken and broccoli and gently stir until everything is coated in the creamy cheese mixture.
  7. Spread evenly into the prepared baking dish.
  8. Sprinkle the remaining 1 cup cheddar cheese and bacon over the top.
  9. Bake uncovered for 20–25 minutes, or until the casserole is hot and bubbly and the cheese is completely melted.
  10. Top with sliced green onions, if desired, and serve warm.

Easy Tips

Make it extra easy: Pick up a rotisserie chicken and a bag of microwaveable broccoli and most of the work is already done.

Using frozen broccoli? Thaw it first and drain it really well so the casserole doesn’t become watery.

Want a little heat? Add a pinch of cayenne or chopped jalapeños.

For meal prep: Assemble it earlier in the day, cover and refrigerate. When you’re ready for dinner, pop it in the oven and add a few extra minutes to the baking time.

Serving idea: This really doesn’t need a side, but a crisp green salad with ranch or vinaigrette would be perfect.
