Back-to-school season means busy afternoons, homework, practices and suddenly realizing it’s 5:30 and everyone is hungry. These five easy dinners are made for exactly those kinds of nights!
We’ve got cheesy Taco Mac for Monday, easy Chicken Parmesan Sliders on Tuesday, a simple Sheet Pan Sausage & Potatoes dinner for Wednesday, Chicken Bacon Ranch Wraps on Thursday and French Bread Pizza to finish out the week.
Each meal uses simple ingredients, doesn’t require a ton of prep and is something the whole family can enjoy. Save the list for one less thing to think about during a busy school week!
Monday — Taco Mac
Ingredients:
1 lb ground beef
1 packet taco seasoning
1 can Rotel, undrained
2 cups elbow macaroni
2 cups beef broth
1½ cups shredded cheddar
Directions: Brown and drain beef. Stir in taco seasoning, Rotel, macaroni and broth. Cover and simmer 12–15 minutes, until pasta is tender. Stir in cheddar until melted.
Tuesday — Chicken Parmesan Sliders
Ingredients:
12 Hawaiian rolls
6 cooked crispy chicken tenders
¾ cup marinara sauce
1½ cups shredded mozzarella
2 tbsp melted butter
½ tsp garlic powder
Directions: Slice rolls in half and layer with chicken, marinara and mozzarella. Replace tops. Mix butter with garlic powder and brush over rolls. Bake at 375°F for 12–15 minutes until hot and golden.
Wednesday — Sheet Pan Sausage & Potatoes
Ingredients:
14 oz smoked sausage, sliced
1½ lbs baby potatoes, halved
12 oz fresh green beans
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
Salt & pepper
Directions: Toss potatoes with half the oil and seasonings. Roast at 425°F for 15 minutes. Add sausage and green beans with remaining oil and seasoning. Roast another 20–25 minutes until potatoes are tender.
Thursday — Chicken Bacon Ranch Wraps
Ingredients:
4 large flour tortillas
4 cooked crispy chicken tenders, sliced
6 slices cooked bacon, crumbled
1 cup shredded cheddar
2 cups shredded lettuce
½ cup ranch dressing
Directions: Divide chicken, bacon, cheddar and lettuce between tortillas. Drizzle with ranch. Fold in the sides, roll tightly and slice in half.
Friday — French Bread Pizza
Ingredients:
1 loaf French bread
1 cup pizza sauce
2 cups shredded mozzarella
Pepperoni
Italian seasoning
Directions: Slice French bread lengthwise and place cut-side up on a baking sheet. Add pizza sauce, mozzarella and pepperoni. Sprinkle with Italian seasoning and bake at 425°F for 10–12 minutes until bubbly and golden.
