Ingredients
- 12 oz rotini pasta
- 8 slices bacon, cooked crisp and crumbled
- 2 cups chopped romaine lettuce
- 1½ cups cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tbsp ranch seasoning mix
- 1 tbsp apple cider vinegar
- ½ tsp garlic powder
- Salt and black pepper, to taste
Instructions
- Cook the pasta according to package directions. Drain and rinse under cold water until completely cooled.
- In a large bowl, whisk together the mayonnaise, sour cream, ranch seasoning, apple cider vinegar, garlic powder, salt, and pepper until smooth.
- Add the cooled pasta, bacon, tomatoes, and cheddar cheese. Toss until everything is evenly coated.
- Gently fold in the chopped romaine just before serving so it stays crisp.
- Chill for at least 30 minutes for the best flavor.
- Garnish with a little extra bacon, cheddar, and black pepper before serving if desired.
Tip: If making ahead, wait to add the lettuce until right before serving to keep it fresh and crunchy.
