Bright, juicy, and full of fresh summer flavor, this easy grilled chicken is perfect for weeknight dinners, cookouts, or meal prep.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, parsley, thyme, rosemary, oregano, salt, and pepper.
- Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, making sure each piece is coated. Refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat your grill to medium-high heat and lightly oil the grates.
- Remove the chicken from the marinade and discard the remaining marinade.
- Grill for 6–7 minutes per side, or until the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes before slicing and serving.
