Green Chile Chicken Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (4-ounce) can diced green chiles
  • 2 (4-ounce) cans chopped green chiles (Hatch or Ortega work well)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups chicken broth
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 (15-ounce) can Great Northern beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 2 cups cooked shredded chicken (rotisserie works great)
  • ½ cup heavy cream
  • Juice of 1 lime

For Serving

  • Shredded Monterey Jack cheese
  • Fresh cilantro

  • Diced avocado
  • Pickled jalapeños
  • Sour cream
  • Extra lime wedges

Instructions

  1. Heat the olive oil in a large Dutch oven or soup pot over medium heat. Add the diced onion and cook for about 4 minutes, until softened.
  2. Stir in the garlic and cook for 1 minute, just until fragrant.
  3. Add both cans of green chiles, cumin, chili powder, oregano, salt, and pepper. Stir well and cook for 1–2 minutes to toast the spices.
  4. Pour in the chicken broth and cream of chicken soup. Whisk or stir until the soup is smooth and well combined.
  5. Add the Great Northern beans and corn. Bring to a gentle boil, then reduce the heat and simmer for 15 minutes.
  6. Stir in the shredded chicken and heavy cream. Continue simmering for another 5 minutes, until the chicken is heated through and the soup is creamy.
  7. Stir in the fresh lime juice. Taste and adjust the seasoning with additional salt and pepper if needed.
  8. Ladle into bowls and top with shredded Monterey Jack cheese, fresh cilantro, and any of your favorite toppings.

For the richest flavor, use rotisserie chicken and add a small pinch of smoked paprika while the soup simmers. It gives the broth a subtle smoky depth that pairs beautifully with the green chiles without overpowering them.
