Ingredients:
1 lb fresh medium sized shrimp or thawed if using frozen
1 lb Cajun or jalapeño sausage
2 green bell peppers chopped
1 onion chopped
3 bunches green onions sliced
4 stalks celery chopped
2-3 Tbsp butter
2 Tbsp olive oil
6-10 c chicken stock
1 can diced tomatoes
1 can rotel
2 tbsp minced garlic
1-2 tbsp cajun seasoning (add more as needed)
2 tsp seasoned salt (to taste)
1 tsp Cayenne pepper
5-6 dashes tabasco or Louisiana hot sauce
1/4 c Worcestershire sauce
3 tsp thyme
3-4 c cooked rice
Prepare shrimp by deveining (if needed) and remove tails. Chop sausage into bite size pieces or slices if desired. Sauté prepared veggies together with 2 tbsp butter and olive oil over medium heat in Dutch oven. Heat olive oil, 1 tbsp butter and garlic in separate pan over medium heat. Add shrimp and cajun seasoning. Cook until shrimp is done. Add chopped sausage to veggies in Dutch oven and combine along with seasonings. Once shrimp is thoroughly cooked, add to veggies and sausage. Add tomatoes and simmer. Add chicken stock and continue simmering for 30 min to an hour. Add Tabasco, Worcestershire and thyme. Mix well and simmer. Add cooked rice and simmer for at least 30 min covered adding more chicken stock if needed and stirring often. Taste and add more seasonings if needed.
